Easy Tomato Soup

Tomatoes are such a versatile fruit forming the base of many fabulous recipes. But if, like us here at Wharncliffe Allotments, you suddenly find yourself with a glut of tomatoes, this simple recipe may be what you need to help.
Preparation time approximately 10-15 minutes.
Cooking time approximately 40 minutes.
Ingredients
Tomatoes (enough to half fill a largish pan).
Sieved Tomatoes Passata 500G.
2 Whole onions (medium sized)
3-4 Cloves of garlic (more to taste).
3-4 Medium sized courgettes (smooth thickening agent).
2 tspn of dried basil.
Salt & pepper seasoning.
Alternative Ingredients
1 tblsp sugar (if you prefer a sweeter flavour).
1 Chicken stock (concentrate pot)
Method
1. Roughly cut tomatoes, onions, garlic and courgettes.
2. Add the ingredients almost fill a large pan (approximately 3 ltrs) leave 1-2 inches for cooking.
3. Add enough water to cover all the ingredients (including chicken stock).
4. Bring to the boil then simmer for 30-40 minutes.
5. Allow to cool before blending until smooth (follow manufacturer guidance best results).
6. Sive to remove bits for a smoother result.
7. Season with salt and pepper to taste.
8. Add sugar (if required) sample soup first before adding sugar, adjusting amount to your taste.
Serve warm with a good quality rustic bread and butter or with Italian ciabatta bread…perfect!
Will serve 4 + easily with enough left over for seconds or to freeze!
