Patty Pan Squash

Fresh ingredients will help to make delicious meals. This recipe can be enjoyed on its own and is suitable for vegetarians or as a side dish.

Ingredients 1/2lb Patty Pan Squash cut into 1" chunks 1 Shallot sliced thin 1tsp Thyme or Roesmary 1 tblspn Olive Oil

Method Pre-heat oven to 200C/400F/Gas 6. Toss everything together in a bowl,.

Spread onto a baking tray. Bake for between 15-30 minutes or until tender.

Best served hot.
