Pickled Beets

Preparation time approximately 10 minutes depending on the number of beets required. Cooking time around 20 - 30 minutes.

Ingredients

1 pint of Malt Vinegar (or pickling vinegar).

1/2 pound of Demerara Sugar.

Method

1. Peel and cook the Beets in water (water must cover the beets in the pan).

2. When cooked (test with knife) and still hot, slice and place in hot sterilised jars.

3. Meanwhile, bring to the boil a mixture of 1 pint of Malt Vinegar and 1/2 a pound of Demerara Sugar.

4. When the sugar is dissolved, pour over the beets and seal the jar.

5. Leave for a month to mature...Yum!

Delicious when eaten with fresh vegetables and goat's cheese.
